Episode 2 – Elk Tacos with Corn & Pepper Salsa

It’s time for another episode of “Can He Cook It?” where my friends and/or family challenge me to come up with a meal from 4 mystery ingredients. Last week, they hit me with 6 ingredients that I turned into quite the meal. This week I’m going to show you a couple of other super simple ways to turn whatever it is you have on hand into something delicious.

I think the quote for this meal was “I don’t even like watermelon, but that was amazing!”

Let’s Get Cookin’!

The same friends that I cooked for in last week’s video came to visit us in The Black Hills of South Dakota on their way to Colorado. What a coincidence that we were in the same place at the same time a week after we were at their house.

We ended up with a great summertime meal that was perfect for being in South Dakota. Here’s the video!

Show Synopsis

From a local market in Custer, SD, I ended up with:

  • Ground elk
  • Corn on the cob
  • Diced green chiles
  • Watermelon

That turned into a delicious lunch of elk tacos with chipotle cheddar cheese and a warm corn salsa and a side of watermelon-feta salad over spinach. Delicious, light, refreshing…perfect for a warm spring or summer day!
