Honey-Chipotle BBQ Sauce Recipe

This past weekend, my roommate and I fired up his smoker and tossed in a brisket and some short ribs. And since there were two of us, we both decided to create our own barbecue sauce to use. He went with a delicious peach-habanero sauce that had a great sweet-spicy combination. I was aiming more for a smoky-sweet flavor with just a little kick, so I went with a honey chipotle sauce.

The Recipe And Some Ideas

Now, keep in mind this was purely an experiment, but I decided to record it and share so you can see a bit of the process that goes on when I create my own ideas and recipes. With something like this, I usually turn to The Google to see if other people have done similar things, then start picking and choosing parts of multiple recipes and adding my own twists. Luckily, I am at a point now where it tends to work out just like this one…I get it 90% right on the first shot and with a couple tweaks, the next time it’s spot on.

So what would I change about this recipe? It was too tomato-y for my tastes. I wanted more smoky-sweetness rather than tomatoiness. From here, I’d drop the tomato paste down to 6 or 8oz. And cutting down on the tomato paste will solve another minor issue…thickness. It wasn’t exactly a sauce. It was more of a thick paste. Delicious, yes, but I didn’t get the consistency I wanted. (I added about a 1/2 cup of water once I put it on the stove to warm to try to thin it some.) And last, I’d make it the night before. The flavors were much better the second day after blending overnight. While it was still thicker and more tomato-y than I wanted, the smoky and sweet flavors blended perfectly.
