Recipe: Curried Banana Chicken

Bananas and curry powder combine to make one delicious and nutritious main course: Curried Banana Chicken.

This recipe is proof to me that simple ingredients and cooking techniques make unbelievably flavorful food. This one is just a mixture of spices and a few other key ingredients to make a richly flavorful sauce.

Ingredients:

1 chicken, cut into pieces
2 tbsp coconut oil
2 bananas
1 tbsp lime juice
1 c chicken broth

Curry Powder:
½ tbsp coriander seeds
½ tbsp cumin
½ tsp mustard seeds
½ tsp black peppercorns
¼ tsp cinnamon
1 clove
½ tsp fennel
1 tsp turmeric

Directions:

  1. Heat coconut oil over medium heat.
  2. Brown chicken pieces.
  3. Add remaining ingredients and simmer until chicken is done, 15-20 minutes.
